Squid, Spaghetti & Sage
– A romantic main dish dinner for 2 –
2-3 tablespoons extra virgin olive oil
1 or 2 cloves of garlic, gently pressed but not peeled
Red pepper flakes
1/2 glass white wine
salt, black pepper to taste
350 gr cleaned squid, bodies cut into 1/2-inch rings, tentacles cut in half
180 gr spaghetti
5 Fresh sage leaves
- In a large saucepan, heat the extra virgin olive oil over moderately low heat. Add the sage leaves and the garlic cloves and cook until lightly brown. Don’t burn the garlic!!! Add the squid, salt, cover and cook for 5 minutes. Take lid off, stir and add white wine. Increase heat and cook until the squid is just tender for about 3 more minutes. Taste and add salt if needed.
- Meanwhile, in a large pot of boiling, salted water, cook the spaghetti until almost ready. If the package says 10 minutes cook them for about 8.
- Drain the pasta then add it to the sauce and simmer until the pasta is done and has absorbed some of the sauce. Add more extra virgin olive oil.
Garnish with 2 more fresh sage leaves. Pour yourself some white wine and cheers! Buon Appetito!
