“Tiramisu” is the Italian translation of “pull me up” and it is a very energetic dessert! The classic recipe has eggs, coffee (espresso) and cocoa powder! The ideal dessert to complement the perfect meal.
4 soya desserts
500 ml dairy free whipping cream
1 pinch of turmeric
1 mug of coffee for dipping the biscuits
rice or agave syrup to sweeten coffee
In a bowl add the whipped cream to the 4 soya desserts. Add a pinch of turmeric to the cream. Soak the vegan biscuits in a bowl with room temperature coffee (preferably espresso) sweetened with rice or agave syrup.
Place the biscuits in a dessert tin or individual bowls and build up layers of tiramisu. Alternate layers of biscuits with whipped cream and then sprinkle the upper top with dark chocolate powder.
Classic Tiramisu Recipe:
1/2 cup white sugar
3 eggs, separated
2 cups of cooled espresso coffee.
2 (8 ounce) tubs of mascarpone cheese
1 pinch sugar
30 sponge fingers
3 tablespoons bitter cocoa powder
Beat 1/2 cup sugar together with egg yolks in a bowl until smooth. Add the mascarpone to the mixture and beat until well blended.
Beat egg whites and a pinch of sugar in a bowl using an electric mixer until stiff peaks form. Gently fold egg whites into mascarpone mixture.
Pour remaining espresso into a shallow dish. Dip 1 side of each sponge finger into the espresso and arrange on a serving platter in 2 horizontal rows of 6 with 2 1/2 sponge fingers in opposite directions on both ends to form a rectangular shape.
Spread 1/2 of the mascarpone mixture onto the sponge finger layer and dust with 1/2 of the cocoa powder. Repeat with remaining sponge fingers dipped in espresso, mascarpone mixture, and cocoa powder. Refrigerate tiramisu then serve.
